Yair Margalit, Ph.D., author of the best-selling Winery Technology and Operations and Concepts in Wine Chemistry, is a physical chemist with many years of research and teaching experience. The book is a much more crisp than earlier edition. It fills the gap between overviews on wine technology and detailed books on wine chemistry. I would recommend it to the serious amateur or small professional winemaker.
